  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 28-ounce can diced tomatoes, with juices
  • 2 tablespoons tomato paste
  • 1.5 cups beef broth
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can corn kernels, drained
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, about 5-7 minutes, breaking it up with a wooden spoon. Drain any excess grease if needed.

Step 3

Add the diced onion, green bell pepper, and minced garlic to the pot. Cook for 4-5 minutes, stirring occasionally, until softened and fragrant.

Step 4

Stir in the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 5

Add the diced tomatoes (with their juices), tomato paste, and beef broth. Stir to combine and bring the mixture to a simmer.

Step 6

Add the kidney beans, black beans, and corn to the pot. Stir well.

Step 7

Lower the heat to medium-low and let the chili simmer uncovered for 30 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 8

Taste and adjust seasoning, adding more salt, chili powder, or cayenne as needed.

Step 9

Serve hot, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream if desired.
