Ingredients

  • 500 grams ripe jujubes (fresh or dried)
  • 2 cups water
  • 2 tablespoons lemon juice
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon salt

Directions

Step 1

If using fresh jujubes, rinse them thoroughly and cut them in half to remove the pits. If using dried jujubes, rinse them and soak them in warm water for 30 minutes to rehydrate.

Step 2

Place the prepared jujubes in a large saucepan along with the water. Bring to a boil over medium heat, then reduce to a simmer. Cook for 30–40 minutes or until the jujubes are soft and falling apart. Stir occasionally to prevent sticking.

Step 3

Remove the pan from heat and let the mixture cool slightly. Use an immersion blender to puree the mixture until smooth, or pass it through a fine-mesh sieve or food mill to remove any skins or tough bits.
