📝 Instructions

13 steps
1

Preheat your oven to 325°F (160°C).

2

Bring a large pot of salted water to a boil.

3

Carefully remove 8–10 large outer leaves from the cabbage, keeping them intact, and blanch them in the boiling water for 2–3 minutes until softened. Drain and pat dry with paper towels. Set aside.

4

Trim excess fat from the pork loin, if necessary, and pat it dry with paper towels.

5

In a small bowl, mix together the garlic, onion, thyme, rosemary, paprika, salt, and pepper. Rub this mixture generously all over the pork loin.

6

Heat the olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 2–3 minutes per side. Remove the pork from the skillet and set aside.

7

Lay the blanched cabbage leaves on a clean work surface, overlapping them slightly to form a large sheet. Place the seared pork loin in the center, then wrap the cabbage leaves tightly around the pork, tucking the edges underneath to seal.

8

Place the wrapped pork seam-side down in a roasting dish. Pour the chicken or vegetable stock around the base of the roast, being careful not to pour it directly onto the cabbage.

9

Dot the top of the cabbage with the butter, then cover the roasting dish tightly with aluminum foil.

10

Roast in the preheated oven for 1 hour and 30 minutes, basting occasionally with the stock.

11

Remove the foil during the last 20 minutes and increase the oven temperature to 375°F (190°C) to allow the cabbage to brown slightly.

12

Once cooked, transfer the cabbage-wrapped pork roast to a serving platter and let it rest for 10 minutes before slicing.

13

Serve warm, drizzled with some of the pan juices for extra flavor. Enjoy your Juicy Tender Cabbage Wrapped Pork Roast!
