Ingredients

  • 1 medium (about 1 pound) Jicama
  • 2 large Oranges
  • 1 large Lime
  • 2 tablespoons, finely chopped Cilantro
  • 2 tablespoons Olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Chili powder (optional)
  • 0.25 teaspoon Pepper

Directions

Step 1

Peel the jicama with a vegetable peeler or a sharp knife. Slice it into thin rounds, then into matchstick-sized strips (julienne). Place the strips into a large mixing bowl.

Step 2

Peel the oranges, removing as much of the white pith as possible. Using a sharp knife, slice the oranges into thin rounds or segment them. Add the orange slices or segments to the bowl with the jicama.

Step 3

Zest the lime into a small bowl. Cut the lime in half and juice it into the same bowl. Add the olive oil, honey, salt, and pepper. If you like a little heat, stir in the chili powder. Whisk the dressing until well combined.
