  • 12 oz penne pasta
  • 3 tbsp olive oil
  • 1.5 cups cherry tomatoes (red and yellow)
  • 1.5 cups bell peppers (red, orange, and yellow), diced
  • 1 medium zucchini, diced
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 cups baby spinach
  • 0.25 cup fresh basil leaves, chopped
  • 0.5 cup grated Parmesan cheese
  • 1 tsp lemon zest
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the red onion slices to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften.

Stir in the diced bell peppers and cook for another 3 minutes, allowing them to soften slightly.
