Ingredients

  • 2 pounds Chicken wings
  • 4 stalks Scallions
  • 2 tablespoons Fresh thyme leaves
  • 4 pieces Garlic cloves
  • 2 pieces Scotch bonnet peppers
  • 1 teaspoon Ground allspice
  • 0.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 2 tablespoons Brown sugar
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

In a blender or food processor, add scallions, thyme leaves, garlic cloves, Scotch bonnet peppers (remove seeds for less heat), ground allspice, ground cinnamon, ground nutmeg, brown sugar, soy sauce, lime juice, vegetable oil, salt, and black pepper.

Blend the ingredients until they form a smooth jerk marinade.

Place the chicken wings in a large bowl or a zip-top bag and pour the marinade over them. Make sure the wings are fully coated.
