Ingredients

  • 1 lb Raw shrimp, peeled and deveined
  • 2 tbsp Jerk seasoning
  • 3 tbsp Olive oil
  • 1 large Red bell pepper, thinly sliced
  • 1 large Yellow bell pepper, thinly sliced
  • 1 large Green bell pepper, thinly sliced
  • 1 large Red onion, thinly sliced
  • 3 cloves Garlic, minced
  • 8 small Tortillas
  • 1 large Lime, cut into wedges
  • 0.5 cup Sour cream (optional)
  • 0.25 cup Cilantro, chopped (optional)
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

In a large mixing bowl, toss the shrimp with 1 tablespoon of olive oil, 2 tablespoons of jerk seasoning, and a pinch of salt and black pepper. Set aside to marinate for 10 minutes while preparing the vegetables.

Step 2

Heat a large skillet or cast-iron pan over medium-high heat. Add 2 tablespoons of olive oil to the hot pan.

Add the red bell pepper, yellow bell pepper, green bell pepper, and red onion to the skillet. Season with a pinch of salt and black pepper and sauté for 5-7 minutes until the vegetables are slightly softened and slightly charred. Add the minced garlic and stir for 1 minute. Remove the vegetables from the skillet and set aside.
