Ingredients

  • 2 cups Vital wheat gluten
  • 1 tablespoon Nutritional yeast
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.75 cup Vegetable broth
  • 3 tablespoons Soy sauce
  • 1 tablespoon Maple syrup
  • 2 tablespoons Jerk seasoning
  • 2 tablespoons Oil (for pan-frying or grilling)
  • 2 cups Water (for steaming)

Directions

Step 1

In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, and onion powder. Stir well to ensure the dry ingredients are evenly distributed.

Step 2

In a separate bowl, mix together the vegetable broth, soy sauce, and maple syrup.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring with a spoon or spatula until the mixture begins to form a dough.

Step 4

Transfer the dough to a clean work surface and knead for about 5 minutes, until the dough is elastic and slightly firm. Be careful not to overwork it.

Step 5

Divide the seitan dough into 4 equal portions and shape them into flat patties or strips, depending on your desired serving style.

Step 6

Wrap each portion loosely in aluminum foil, leaving some space for expansion during cooking. Twist the ends of the foil to seal.

Step 7

Bring 2 cups of water to a simmer in a large pot with a steaming basket. Place the foil-wrapped seitan in the basket and steam for 30 minutes, flipping them halfway through the steaming process.

Step 8

Once steamed, remove the seitan from the pot and allow it to cool slightly before unwrapping.

Step 9

In a small bowl, mix the jerk seasoning with the oil to create a paste. Rub this paste generously all over the steamed seitan pieces.

Step 10

Heat a grill or skillet over medium-high heat. Cook the jerk-seasoned seitan for 3-4 minutes on each side until browned and slightly crispy.

Step 11

Serve the Jerk Seitan immediately with your choice of sides, such as rice and peas, grilled vegetables, or a fresh salad.
