Ingredients

  • 300 grams fresh cranberries
  • 250 grams granulated sugar
  • 120 milliliters water
  • 10 grams powdered gelatin
  • 60 milliliters cold water
  • 100 grams chopped walnuts
  • 50 grams powdered sugar

Directions

Step 1

Prepare the gelatin by sprinkling it over 60 ml of cold water in a small bowl. Let it bloom for 5-10 minutes.

Step 2

In a medium saucepan, combine the cranberries, granulated sugar, and 120 ml of water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 10 minutes.

Step 3

Remove the cranberry mixture from heat and use an immersion blender (or transfer to a food processor) to puree until smooth.

Step 4

Return the cranberry mixture to the saucepan and place it over low heat. Stir in the bloomed gelatin until completely dissolved.

Remove from the heat and fold in the chopped walnuts.
