Ingredients

  • 6 cups water
  • 1 piece (about 4x4 inches) kombu (dried seaweed)
  • 4 large (dried or fresh, sliced if fresh) shiitake mushrooms
  • 0.25 cup white miso paste
  • 1 block (firm, cut into 1/2-inch cubes) tofu
  • 2 stalks (thinly sliced) green onions
  • 1 tablespoon (freshly grated) ginger
  • 2 cloves (minced) garlic
  • 1 tablespoon wakame (dried seaweed)
  • 1 None lime
  • 1 teaspoon (optional, for garnish) sesame oil

Directions

Step 1

In a medium pot, add the water and kombu. Let it soak for 10 minutes if time allows for a more flavorful base.

Step 2

If using dried shiitake mushrooms, soak them in a small bowl of warm water for about 10 minutes until softened, then slice them thinly. Save the soaking liquid to add to the soup for extra umami flavor.

Step 3

Heat the pot with the kombu over medium heat. Just before the water starts boiling, remove the kombu and discard or save for another use.

Step 4

Add the sliced shiitake mushrooms to the pot, along with the grated ginger and minced garlic. Let simmer for 5 minutes.

Step 5

In a small bowl, whisk the miso paste with a ladleful of the hot broth until smooth. This prevents clumps. Then stir the miso mixture back into the pot.

Step 6

Add the tofu cubes and wakame to the soup. Simmer gently for another 5 minutes, being careful not to boil to preserve the delicate flavors of the miso.

Step 7

Remove the pot from heat and squeeze in the juice of the lime for a fresh, citrusy finish.

Step 8

Ladle the soup into bowls and garnish with thinly sliced green onions and a small drizzle of sesame oil, if desired.

Step 9

Serve immediately and enjoy this jazzy twist on traditional miso soup!
