Ingredients

  • 350 grams spaghetti or linguine
  • 120 grams peanut butter (creamy or chunky)
  • 200 milliliters coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 cloves garlic cloves
  • 1 teaspoon ginger (freshly grated)
  • 1 teaspoon red chili flakes
  • 1 tablespoon sesame oil
  • 3 scallions (sliced for garnish)
  • 2 tablespoons crushed peanuts (for garnish)
  • 1 tablespoon vegetable oil
  • 60 milliliters water (reserved pasta water)

Directions

Step 1

Cook the spaghetti or linguine according to package instructions. Reserve 60ml of pasta water before draining.

While the pasta cooks, prepare the peanut sauce. Mince the garlic cloves and grate the fresh ginger.
