Ingredients

  • 200 grams Glutinous rice flour (shiratamako or mochiko)
  • 150 grams Silken tofu
  • 120 milliliters Water
  • 2 tablespoons Soy sauce
  • 4 tablespoons Sugar
  • 2 tablespoons Mirin (sweet rice wine)
  • 1 teaspoon Cornstarch
  • 2 teaspoons Water (for slurry)

Directions

Step 1

In a mixing bowl, combine the glutinous rice flour and silken tofu. Use your hands to knead the mixture until it forms a smooth, soft dough. If the dough is too dry, add water one tablespoon at a time until the desired consistency is reached.

Step 2

Divide the dough into equal portions and roll each portion into small, round balls about 2-3 cm in diameter.

Step 3

Bring a pot of water to a boil. Carefully drop the rice balls into the boiling water and let them cook until they float to the surface. Once floating, allow them to cook for an additional 2 minutes.

Using a slotted spoon, transfer the cooked dumplings to a bowl of cold water to stop the cooking process. After a minute, drain and set aside.
