Ingredients

  • 12 pieces Large mushrooms (e.g., button or cremini)
  • 200 grams Ground chicken or pork
  • 1 tablespoon White miso paste
  • 1 teaspoon Soy sauce
  • 1 teaspoon Mirin
  • 1 teaspoon Sesame oil
  • 1 clove Garlic, finely minced
  • 2 stalks Scallions, finely chopped
  • 2 tablespoons Panko breadcrumbs
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Toasted sesame seeds (optional, for garnish)

Directions

Step 1

Gently clean the mushrooms with a damp paper towel to remove any dirt or debris. Carefully remove the stems and set them aside. Hollow out the mushroom caps slightly to create room for stuffing, if needed.

Step 2

Finely chop the mushroom stems and set them aside to be incorporated into the stuffing.

Step 3

In a large mixing bowl, combine the ground chicken or pork, white miso paste, soy sauce, mirin, sesame oil, minced garlic, chopped scallions, panko breadcrumbs, and the finely chopped mushroom stems. Mix well until all ingredients are evenly combined.

Step 4

Using a small spoon or your hands, stuff each mushroom cap with the filling mixture, pressing gently to pack it in. Ensure the filling is slightly mounded on top for a nice presentation.

Step 5

In a large skillet, heat the vegetable oil over medium heat. Place the stuffed mushrooms filling-side down in the skillet and cook for 2-3 minutes, until the filling is golden brown.

Step 6

Carefully flip the mushrooms over, reduce the heat to low, and cover the skillet with a lid. Allow the mushrooms to cook for an additional 7-8 minutes, or until the filling is fully cooked and the mushrooms are tender.

Step 7

Remove the stuffed mushrooms from the skillet and transfer them to a serving platter. Garnish with toasted sesame seeds, if desired, and serve immediately.
