Ingredients

  • 3 cups Cooked white rice, preferably chilled
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 2 large Eggs
  • 0.5 cup Onion, finely chopped
  • 0.5 cup Carrot, finely diced
  • 0.5 cup Frozen peas
  • 2 stalks Green onions, thinly sliced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare all ingredients before you start cooking. Chop the onions, carrots, and green onions, and have the rice cold and ready.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

Step 3

Beat the eggs in a bowl. Add them to the skillet, stirring gently just until they are softly scrambled. Remove the eggs from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion and carrot and stir-fry for about 2-3 minutes, until they are softened.
