Ingredients

  • 4 pieces Chicken thighs (boneless, skin-on)
  • 4 tablespoons Soy sauce
  • 3 tablespoons Mirin (sweet rice wine)
  • 2 tablespoons Sake
  • 2 tablespoons Sugar
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Ginger (freshly grated)
  • 1 teaspoon Garlic (minced)
  • 2 stalks Green onions (sliced, for garnish)
  • 1 teaspoon Sesame seeds (toasted, for garnish)
  • 2 cups Cooked white rice

Directions

Step 1

In a small bowl, combine soy sauce, mirin, sake, sugar, ginger, and garlic. Stir until the sugar is dissolved to make the teriyaki sauce.

Step 2

Pat the chicken thighs dry with paper towels. This helps to get a good sear on the chicken.

Step 3

Heat a large skillet over medium heat and add the vegetable oil. Once the oil is hot, place the chicken thighs skin-side down. Cook for 5–6 minutes until the skin is golden brown and crispy.

Flip the chicken thighs and cook for another 5 minutes until the other side is cooked through. The internal temperature should reach 165°F (74°C).

Remove the chicken from the skillet and set aside on a plate.

Remove the chicken from the skillet and let it rest for a minute. Slice into strips for serving if desired.
