Ingredients

  • 6 lbs bone-in ham
  • 2 cups dry red wine
  • 1 cup orange juice
  • 0.5 cup honey
  • 0.5 cup brown sugar
  • 1 zest of an orange
  • 1 cinnamon stick
  • 8 cloves
  • 3 lemon slices
  • 3 orange slices
  • 1 apples, sliced
  • 2 tbsp butter
  • 0.5 tsp salt

Directions

Step 1

Preheat your oven to 325°F (160°C) and place a rack in the lower third of the oven.

Step 2

In a small saucepan, combine the red wine, orange juice, honey, brown sugar, orange zest, cinnamon stick, and cloves. Heat over medium heat until the sugar dissolves completely and the mixture is slightly reduced (about 10 minutes). Remove from heat and set aside.

Step 3

Place the ham in a large roasting pan, fat side up. Score the surface of the ham in a diagonal crisscross pattern, about 1/4 inch deep. Rub the ham with butter and sprinkle with salt.

Pour half of the sangria glaze over the ham, making sure to coat it evenly. Reserve the other half of the glaze for basting.

Arrange the lemon slices, orange slices, and apple slices around the ham in the roasting pan.

Cover the ham loosely with aluminum foil and roast in the preheated oven for 2 1/2 hours, basting every 30 minutes with the reserved glaze.

After 2 1/2 hours, remove the foil and increase the oven temperature to 375°F (190°C). Continue roasting for an additional 30 minutes, basting every 10 minutes, until the ham is deeply caramelized and the glaze is sticky.

Remove the ham from the oven and let it rest for 15-20 minutes before carving.

Serve the ham alongside the roasted fruits and drizzle any remaining pan juices over the slices for added flavor.
