  • 0.5 teaspoons cayenne pepper
  • 2 tablespoons tomato paste
  • 400 grams canned chopped tomatoes
  • 1 cup beef stock
  • 400 grams cooked kidney beans
  • 400 grams cooked black beans
  • 20 grams dark chocolate
  • 1 handful fresh coriander leaves
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 large lime
  • 0 to serve steamed rice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Finely chop the onion, garlic, and red chili. Grate the carrot and finely chop the celery and red bell pepper.

Step 3

Add the onion, garlic, chili, carrot, celery, and bell pepper to the pot. Cook for 5–7 minutes until softened, stirring regularly.

Add the ground beef, breaking it up with a wooden spoon, and cook until browned, about 8–10 minutes.

Step 5

Stir in the ground cumin, cinnamon, paprika, and cayenne pepper. Cook for 1–2 minutes until fragrant.

Add the tomato paste and stir well to coat the beef and vegetables.

Pour in the canned chopped tomatoes and beef stock, stirring to combine. Bring the mixture to a gentle simmer.
