  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 8 ounces andouille sausage
  • 1 pound chicken breast
  • 8 ounces shrimp (peeled and deveined)
  • 1 large yellow onion
  • 2 medium bell peppers (red and green)
  • 2 celery stalks
  • 4 garlic cloves
  • 14.5 ounces canned diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Heat 1 tablespoon of olive oil in a large skillet or deep pan over medium heat. Slice the andouille sausage into rounds and cook until browned. Remove from the pan and set aside.
