Ingredients

  • 3 pounds Beef short ribs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 large Onion, chopped
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 Scotch bonnet pepper, minced
  • 0.25 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Tomato paste
  • 1 teaspoon Allspice, ground
  • 1 teaspoon Thyme, dried
  • 1 cup Beef broth
  • 2 tablespoons Lime juice
  • 2 Green onions, chopped
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Season the beef short ribs with salt and black pepper on all sides.

Step 2

In a large skillet, heat the vegetable oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Transfer the ribs to the crock pot.

Step 3

In the same skillet, add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant. Add the mixture to the crock pot.

Step 4

In a small bowl, whisk together the soy sauce, brown sugar, tomato paste, allspice, thyme, beef broth, and lime juice. Pour the mixture over the short ribs in the crock pot.

Step 5

Scatter the minced Scotch bonnet pepper, green onions, and optional fresh cilantro on top.

Step 6

Cover the crock pot with the lid and cook on low heat for 8 hours, or until the meat is tender and falling off the bone.

Step 7

Once done, carefully remove the short ribs from the crock pot and skim off any excess fat from the cooking liquid if necessary.

Step 8

Serve the short ribs with the sauce from the crock pot, over rice, mashed potatoes, or with your favorite side dish. Garnish with additional chopped cilantro if desired.
