Ingredients

  • 6 large Egg yolks
  • 1 cup Granulated sugar
  • 2 cups Whole milk

  • 0.25 teaspoon Allspice
  • 1 pinch Pinch of salt
  • 4 sticks Cinnamon stick (for garnish)
  • 1 teaspoon Grated nutmeg (for garnish)

Directions

Step 1

In a large mixing bowl, whisk the egg yolks and sugar together until the mixture is thick and pale yellow.

Step 2

In a medium saucepan, combine the whole milk, coconut milk, and heavy cream. Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling.

Step 3

Slowly pour about 1/2 cup of the hot milk mixture into the egg yolk mixture while whisking constantly. This process tempers the egg yolks and prevents them from scrambling.

Gradually add the tempered egg yolk mixture back into the saucepan with the remaining milk mixture, whisking constantly.
