Ingredients

  • 3 cups all-purpose flour
  • 1 cup unsalted butter
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 0.75 cup cold water
  • 1 pound ground beef
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 scallions, finely chopped
  • 1 teaspoon thyme leaves, fresh or dried
  • 0.5 teaspoon allspice
  • 1 teaspoon paprika
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 0.5 scotch bonnet pepper, finely minced (optional, for heat)
  • 0.25 cup breadcrumbs
  • 0.5 cup beef stock or water
  • 1 egg, beaten

Directions

Step 1

In a large mixing bowl, whisk together the flour, curry powder, turmeric, and 1 teaspoon of salt.

Cut the cold unsalted butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Slowly add the cold water, 1 tablespoon at a time, while mixing. Knead the dough gently until it comes together. Wrap it in plastic wrap and refrigerate for at least 1 hour.

Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it into small pieces with a spoon. Drain off excess fat and set aside.

Place 2-3 tablespoons of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape. Press the edges together and seal by crimping with a fork.

Brush the tops of the patties with the beaten egg for a golden finish.

Place the patties on the prepared baking sheet and bake for 25-30 minutes, until golden brown.
