Ingredients

  • 500 grams All-purpose flour
  • 50 grams Granulated sugar
  • 10 grams Instant yeast
  • 1 teaspoon Salt
  • 250 milliliters Whole milk
  • 50 grams Unsalted butter (softened)
  • 2 large Eggs
  • 1000 milliliters Vegetable oil (for frying)
  • 200 grams Jam (strawberry, raspberry, or your favorite)
  • 50 grams Powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Stir to evenly distribute the dry ingredients.

Step 2

In a saucepan or microwave, heat the milk until it is warm to the touch but not hot (around 37-40°C or 98-104°F).

Step 3

Make a well in the center of the dry ingredients and add the warm milk, softened butter, and eggs. Mix until a sticky dough begins to form.

Step 4

Transfer the dough to a lightly floured surface and knead for 8-10 minutes, or until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook on medium speed for 6-8 minutes.

Step 5

Place the dough in a lightly greased bowl, cover with a damp kitchen towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.

Step 6

Once risen, punch down the dough to release air bubbles and transfer it to a floured surface. Roll it out until it is about 1.5 cm (0.6 inches) thick.

Step 7

Use a round cutter (approximately 7-8 cm or 3 inches in diameter) to cut out circles of dough. Transfer the dough circles to a parchment-lined baking sheet. Re-roll any scraps and repeat until all the dough is used.

Step 8

Cover the dough circles with a damp kitchen towel and let them rest for 30 minutes, or until slightly puffed.

Step 9

Heat the vegetable oil in a deep fryer or large pot to a temperature of 170-180°C (340-360°F). Test the oil with a small piece of dough; it should sizzle immediately and cook to golden brown in about 1 minute per side.

Step 10

Carefully lower the doughnuts into the hot oil, 2-3 at a time, to avoid overcrowding. Fry for 1-2 minutes per side, or until golden brown. Remove with a slotted spoon and drain on a paper towel-lined plate.

Step 11

Once all the doughnuts are fried and slightly cooled, fill a piping bag fitted with a small round nozzle with your jam of choice. Insert the nozzle into the side of each doughnut and pipe jam into the center until slightly full.

Step 12

Dust the doughnuts generously with powdered sugar before serving. Enjoy while warm for the best flavor and texture!
