Ingredients

  • 8 ounces Silken tofu
  • 1 medium Jalapeno pepper
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Olive oil
  • 1 large Garlic clove
  • 1 teaspoon Maple syrup
  • 0.5 teaspoons Cumin powder
  • 0.5 teaspoons Salt
  • 2 tablespoons Water
  • 2 tablespoons Fresh cilantro leaves (optional, for garnish)

Directions

Step 1

Drain the silken tofu and place it in a blender or food processor.

Cut the jalapeno in half lengthwise and remove the seeds and membranes for a milder dressing, or leave them in for more heat. Roughly chop the jalapeno and add it to the blender.

Peel and roughly chop the garlic clove, then add it to the blender along with the fresh lime juice, olive oil, maple syrup, cumin powder, salt, and water.
