Ingredients

  • 1 lb ribeye or skirt steak
  • 3 whole jalapenos
  • 1 medium white onion
  • 6 slices provolone cheese
  • 4 rolls hoagie rolls or sandwich buns
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp butter

Directions

Step 1

Trim the steak of excess fat, and slice it thinly against the grain into strips about 1/4 inch thick. Place the strips in a bowl and toss with salt, black pepper, and garlic powder to season. Set aside.

Step 2

Slice the jalapenos into thin rounds, removing seeds for less heat (optional), and thinly slice the white onion.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced jalapenos and onions, cooking for 5-7 minutes until softened and slightly caramelized. Remove from the skillet onto a plate and set aside.

Step 4

In the same skillet, increase the heat to medium-high, and add the remaining tablespoon of olive oil. Add the steak strips in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until browned and cooked through. Return the onion and jalapeno mixture to the skillet and stir to combine. Remove from heat.

Step 5

Slice the hoagie rolls or buns and lightly toast them. Spread butter evenly across the cut sides of the rolls for extra flavor.

Step 6

Place the steak, onion, and jalapeno mixture onto the bottom half of each roll. Add 1-2 slices of provolone cheese on top of the mixture, and place the sandwiches under a broiler for 1-2 minutes to melt the cheese, being careful not to burn the bread.

Step 7

Top with the other half of the roll, slice in half if desired, and serve warm. Pair with chips, fries, or a side salad for a complete meal.
