Ingredients

  • 2 cups (finely diced, fresh or canned) Pineapple
  • 2 small (finely chopped, seeds removed for less heat) Jalapenos
  • 0.5 cup (finely chopped) Onion
  • 1 tablespoon (freshly grated) Ginger
  • 2 cloves (minced) Garlic
  • 0.5 cup Brown sugar
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon (or to taste) Salt
  • 2 tablespoons (finely chopped, for garnish) Cilantro
  • 0.25 cup Water

Directions

Step 1

Begin by prepping all your ingredients. Dice the pineapple, finely chop the jalapenos (removing seeds for less heat), onion, and garlic, and grate fresh ginger.

Step 2

In a medium-sized saucepan over medium heat, combine the diced pineapple, jalapenos, onion, ginger, garlic, and water.

Step 3

Stir in the brown sugar, apple cider vinegar, lime juice, ground cumin, ground coriander, and salt.

Step 4

Bring the mixture to a gentle boil while stirring occasionally to dissolve the sugar. Once boiling, reduce the heat to low and let the chutney simmer uncovered for 20-25 minutes.

Step 5

During the simmering process, stir occasionally to prevent sticking and allow the mixture to thicken as the pineapple releases its juices and the liquid reduces.

Step 6

Once the chutney reaches a thick, jam-like consistency, taste and adjust the seasoning (you can add more salt, lime juice, or brown sugar based on personal preference).

Step 7

Remove the saucepan from the heat and let the chutney cool to room temperature.

Step 8

Transfer the chutney to a sterilized jar or airtight container. Sprinkle fresh cilantro on top as a garnish before serving.

Step 9

Store in the refrigerator for up to 2 weeks. Enjoy as a condiment with your favorite dishes!
