Ingredients

  • 1 packet Orange jelly
  • 150 ml Boiling water
  • 1 large Egg
  • 25 g Caster sugar
  • 25 g Self-raising flour
  • 100 g Dark chocolate

Directions

Step 1

Prepare the orange jelly by dissolving the jelly packet in 150ml of boiling water. Stir well until completely dissolved.

Step 2

Pour the jelly into a shallow, flat-bottomed dish (approximately 20 cm in diameter) to create a thin layer. Refrigerate for about 1-2 hours or until set.

Step 3

Preheat the oven to 180°C (160°C fan) or 350°F. Lightly grease a 12-hole non-stick muffin tin.

In a mixing bowl, whisk the egg and caster sugar together until thick, pale, and creamy, about 5 minutes.

Sift the self-raising flour into the egg mixture, then gently fold it in using a spatula or metal spoon, taking care not to deflate the mixture.

Spoon a heaped tablespoon of the batter into each hole of the muffin tin, spreading it out slightly to form a thin layer.
