Ingredients

  • 4 pieces Orange bell peppers
  • 1 pound Ground beef
  • 1 cup Cooked white rice
  • 1 cup Shredded cheddar cheese
  • 1 small (diced) Onion
  • 2 cloves (minced) Garlic
  • 1 cup Tomato sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off of the orange bell peppers and remove the seeds and membranes. Set the tops aside. If desired, use a small paring knife to carve Jack O' Lantern faces into the peppers.

Step 3

In a large skillet, heat the olive oil over medium heat. Sauté the diced onion and minced garlic until fragrant and softened, about 3 minutes.

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess grease.

Stir in the cooked rice, tomato sauce, salt, black pepper, paprika, and dried oregano. Let the mixture heat through for 2-3 minutes, then remove from the heat.
