Ingredients

  • 5 large Fresh lemons
  • 200 grams Granulated sugar
  • 1 liter Water
  • 1 tablespoon Lemon zest
  • 5 leaves Optional: fresh mint leaves

Directions

Step 1

Wash the lemons thoroughly and zest one of them to obtain 1 tablespoon of lemon zest. Set the zest aside.

Step 2

Cut the lemons in half and juice them to yield approximately 1 cup (240 ml) of fresh lemon juice. Strain the juice to remove seeds and pulp for a smooth texture.

Step 3

In a small saucepan, combine the granulated sugar and 500 ml of water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved to create a simple syrup. This should take about 5 minutes. Remove from heat and let it cool to room temperature.

Step 4

In a mixing bowl, combine the cooled simple syrup, lemon juice, the remaining 500 ml of water, and the lemon zest. Stir well to incorporate all the ingredients.

Step 5

Pour the mixture into a shallow, freezer-safe container. Place it in the freezer and let it chill for 30 minutes.

Step 6

After 30 minutes, use a fork to scrape and stir the mixture, breaking up any ice crystals that have started to form. Repeat this process every 30 minutes for 3 hours, or until the mixture has a granular, icy texture.

Step 7

Spoon the Italian Water Ice into serving bowls or cups. Garnish with fresh mint leaves, if desired, and serve immediately.
