Ingredients

  • 6 large ripe tomatoes
  • 1.5 cups stale bread crumbs
  • 0.5 cups Parmesan cheese, grated

  • 0.25 cups extra-virgin olive oil

  • 1 cup mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash the tomatoes and slice the tops off (about 1/2 inch). Carefully scoop out the seeds and flesh with a spoon, leaving the outer shell intact. Reserve the tomato flesh in a bowl.

Mash the reserved tomato flesh with a fork to create a chunky pulp and set it aside.
