Ingredients

  • 4 large Bell peppers (any color)
  • 1 pound Ground beef
  • 1 cup Cooked white rice
  • 14.5 ounces Diced tomatoes (canned)
  • 8 ounces Tomato sauce
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 1 medium Yellow onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the insides with olive oil and set them upright in a baking dish.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 4

Add the minced garlic to the skillet and cook for an additional minute until fragrant.

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat.

Stir in the cooked rice, diced tomatoes (with juices), 4 ounces of tomato sauce, oregano, basil, salt, and black pepper. Mix well and simmer for 5 minutes to marry the flavors.

Stuff each bell pepper with the beef and rice mixture, pressing down gently to pack it in.

Pour the remaining 4 ounces of tomato sauce over the tops of the stuffed peppers.
