  • 500 grams chicken breast
  • 1 large zucchini
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 200 grams cherry tomatoes
  • 100 grams baby spinach
  • 3 units garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons crushed red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons balsamic vinegar
  • 50 grams parmesan cheese (optional)

Directions

Step 1

Place the chicken breast on a cutting board and slice it into thin strips. Season the chicken with half the salt, black pepper, and oregano.

Step 2

Wash and prepare the vegetables: slice the zucchini into half-moons, thinly slice the bell peppers, and halve the cherry tomatoes. Mince the garlic cloves.

Step 3

Heat 2 tablespoons of olive oil in a large non-stick skillet or wok over medium-high heat. Add the chicken strips and stir-fry for 4-5 minutes until golden and cooked through. Transfer the chicken to a plate and set aside.
