Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  • 2 cups cherry tomatoes, halved

  • 3 cups fresh spinach leaves
  • 0.25 cup Parmesan cheese, grated

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
