Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup dry white wine
  • 0.5 tsp crushed red pepper flakes
  • 2 tbsp lemon juice, freshly squeezed
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Rinse the shrimp under cold water and pat dry with paper towels. Set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet and season with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper. Cook for 2-3 minutes per side, until pink and opaque. Transfer the shrimp to a plate and set aside.

In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 1 minute, until fragrant.
