Ingredients

  • 4 count Italian sausage links
  • 1 large Onion
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 2 tablespoons Olive oil
  • 2 count Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 count Hoagie rolls
  • 4 count Provolone cheese slices
  • 1 tablespoon Tomato paste
  • 2 tablespoons Water
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and cook for 10-12 minutes, turning occasionally, until browned and cooked through. Remove the sausages from the skillet and set them aside.

Step 2

While the sausages are cooking, thinly slice the onion, green bell pepper, and red bell pepper. Mince the garlic cloves.

Step 3

Add the remaining 1 tablespoon of olive oil to the same skillet and heat over medium heat. Add the sliced onions and peppers, and sauté for 5-7 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic to the skillet and cook for 1 minute, stirring to avoid burning.

Step 5

Stir in the tomato paste and water, mixing to coat the vegetables. Season with salt and black pepper, then reduce the heat to low and cook for another 2-3 minutes.

Step 6

Preheat the oven to 375°F (190°C). Slice the hoagie rolls lengthwise, but do not cut all the way through. Place the rolls on a baking sheet.

Step 7

Place one cooked sausage link inside each hoagie roll. Top with the peppers and onions mixture, then lay a slice of provolone cheese on top of each sandwich.

Step 8

Bake the sandwiches in the oven for 5-7 minutes, or until the cheese is melted and the rolls are slightly toasted.

Step 9

Remove the sandwiches from the oven and garnish with freshly chopped parsley if desired. Serve immediately and enjoy!
