Ingredients

  • 1 pound Italian sausage (mild or spicy)

  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Pasta (penne, rigatoni, or your choice)
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it into bite-sized pieces, until browned and cooked through, about 8 minutes. Remove the sausage and set aside.

Step 2

In the same skillet, add the olive oil. Once hot, add the sliced bell peppers and onion. Sauté for 5-7 minutes until softened and slightly caramelized.

Step 3

Add the minced garlic to the skillet. Sauté for 1 minute until fragrant.
