Ingredients

  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 2 cups Fresh spinach, roughly chopped
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 0.5 cup Parmesan cheese, grated (for topping)
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat a large Dutch oven or soup pot over medium heat. Add the olive oil.

Remove the casing from the Italian sausage if necessary. Add the sausage to the pot and cook, breaking it up with a wooden spoon, until browned and cooked through. Remove the cooked sausage with a slotted spoon and set aside.
