Ingredients

  • 500 grams fresh salmon fillets (skin removed)
  • 60 grams breadcrumbs (preferably panko)
  • 30 grams grated parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh basil (chopped)
  • 1 whole zest of a lemon
  • 1 whole egg
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 whole burger buns
  • 1 cup arugula
  • 1 whole tomato (sliced)
  • 4 tablespoons mayonnaise or aioli (optional)

Directions

Step 1

Chop the fresh salmon fillets into small chunks (around 1 cm) and place half of them in a food processor. Pulse until it becomes a smooth paste.

Step 2

Place the smooth salmon paste and the remaining chopped salmon chunks into a large mixing bowl.

Step 3

Add breadcrumbs, grated parmesan cheese, chopped parsley, chopped basil, lemon zest, egg, minced garlic, salt, and black pepper to the bowl. Mix well until all ingredients are evenly combined.

Divide the mixture into four equal portions and shape them into burger patties about 2 cm thick. Place the patties on a plate and refrigerate for 15 minutes to firm up.
