  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned cannellini beans, drained and rinsed
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 cups kale leaves, stems removed and roughly chopped
  • 0.25 cups Parmesan cheese, grated (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the Italian sausage and cook until browned, breaking it up into small pieces with a spoon. Remove the sausage from the pot and set it aside.
