  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Wash and dice the red bell pepper, green bell pepper, yellow onion, and zucchini into small, uniform pieces.

Mince the garlic cloves and set aside.

Heat 2 tablespoons of the olive oil in a large skillet over medium heat.

Add the diced red and green bell peppers, onion, and zucchini to the skillet. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are softened but not mushy.
