Ingredients

  • 4 medium Russet potatoes
  • 2 large Eggs
  • 50 grams Parmesan cheese
  • 60 grams All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 500 milliliters Vegetable oil

Directions

Step 1

Peel the potatoes and cut them into chunks. Place them in a large pot and cover them with cold water. Add a pinch of salt to the water and bring it to a boil over medium-high heat.

Step 2

Cook the potatoes until fork-tender, about 12-15 minutes. Drain them well and mash them in a large mixing bowl until smooth. Allow the mashed potatoes to cool slightly.

Step 3

Stir in the eggs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix well to combine.

Step 4

Gradually add the flour to the potato mixture, stirring until a soft, slightly sticky dough forms. If the dough is too sticky, add a little extra flour, a tablespoon at a time.

Step 5

Heat the vegetable oil in a deep, heavy-bottomed skillet or pot to 180°C (350°F).

Step 6

Using two spoons, form small balls or dollops of the potato mixture, about the size of a walnut. Carefully drop them into the hot oil, working in batches to avoid overcrowding.

Step 7

Fry the potato puffs for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove them from the oil and transfer to a plate lined with paper towels to drain any excess oil.

Step 8

Repeat with the remaining potato mixture, ensuring the oil maintains its temperature between batches.

Step 9

Serve the Italian Potato Puffs warm, garnished with extra Parmesan cheese and freshly chopped parsley, if desired. They pair beautifully with marinara or garlic aioli for dipping.
