  • 4 lbs Pork shoulder (boneless)
  • 6 cloves Garlic cloves (minced)
  • 2 tbsp Fennel seeds
  • 2 tbsp Fresh rosemary (chopped)
  • 2 tbsp Fresh thyme leaves
  • 1 cup Fresh parsley (chopped)
  • 2 tbsp Olive oil
  • 1.5 tbsp Kosher salt
  • 2 tsp Black pepper (freshly ground)
  • 1 tsp Crushed red pepper flakes
  • 1 whole lemon Lemon zest

Directions

Step 1

Preheat your oven to 300°F (150°C).

Pat the pork shoulder dry with paper towels and set it aside.

Step 3

In a small skillet over medium heat, toast the fennel seeds for about 2 minutes until aromatic. Transfer them to a mortar and pestle or spice grinder and crush them lightly.

In a small mixing bowl, combine the minced garlic, crushed fennel seeds, rosemary, thyme, parsley, olive oil, kosher salt, black pepper, red pepper flakes, and lemon zest. Mix well to form a coarse paste.
