  • 6 cups chicken or vegetable stock
  • 4 cups kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups day-old crusty bread, cubed (optional)
  • 0.5 cups grated Parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

Add the minced garlic and cook for 1 minute, stirring frequently to prevent burning.

Stir in the canned diced tomatoes and cook for 2 minutes to combine the flavors.
