Ingredients

  • 12 oz rotini pasta
  • 2 cups cherry tomatoes
  • 1 large cucumber
  • 1 large red bell pepper
  • 0.5 medium red onion
  • 0.75 cup black olives
  • 1 cup mozzarella cheese balls
  • 0.5 cup pepperoni slices
  • 1 cup Italian dressing
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • 0.5 tsp pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente, about 8-10 minutes.

Step 2

Drain the pasta and rinse under cold water to cool it down. Set it aside to drain completely.

Step 3

While the pasta cools, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion.

Drain and slice the black olives if needed. Cut the mozzarella cheese balls in half if they are large.

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella cheese balls, and pepperoni slices.
