Ingredients

  • 2 rolls ciabatta bread
  • 4 tablespoons pesto sauce
  • 4 slices prosciutto
  • 4 slices fresh mozzarella
  • 1 medium tomato
  • 1 cup arugula
  • 2 tablespoons olive oil

Directions

Step 1

Slice the ciabatta rolls in half horizontally to create a top and bottom piece.

Step 2

Spread 1 tablespoon of pesto on the cut side of each piece of bread.

Step 3

Layer 2 slices of prosciutto on the bottom half of each ciabatta roll.

Step 4

Add 2 slices of fresh mozzarella on top of the prosciutto on each roll.

Step 5

Slice the tomato into thin rounds and place 2-3 slices on top of the mozzarella for each sandwich.

Step 6

Top the tomatoes with a handful of arugula (about 1/2 cup per sandwich).

Place the top halves of the ciabatta rolls over the arugula to close the sandwich.

Brush the outside of the ciabatta rolls with olive oil on both sides.
