Ingredients

  • 4 pieces Italian sausage or hot dogs
  • 2 medium Potatoes
  • 2 medium Bell peppers (red, green, or a mix)
  • 1 medium Yellow onion
  • 2 pieces Garlic cloves, minced
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 4 pieces Hot dog buns (preferably sub or hoagie rolls)
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Peel the potatoes (if desired) and cut them into thin wedges or small chunks. Set aside.

Step 2

Slice the bell peppers and onion into thin strips. Mince the garlic.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potato wedges, season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, and cook until golden brown and crispy, about 12-15 minutes. Stir occasionally to prevent sticking. Remove potatoes from the skillet and set aside on a plate lined with paper towels.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced peppers, onion, and minced garlic. Sauté for 5-6 minutes until vegetables are softened but still slightly crisp. Toss with 1/2 teaspoon of Italian seasoning and additional salt and pepper to taste. Remove from the skillet and set aside.

Step 5

Add the Italian sausage or hot dogs to the skillet and cook over medium heat, turning occasionally, until browned and heated through, about 6-8 minutes. Alternatively, you can grill the sausages for added flavor.

Step 6

Toast the hot dog buns or rolls lightly in an oven or on a griddle if desired.

Step 7

To assemble, place a sausage or hot dog in each bun, top with a generous portion of sautéed peppers and onions, and add a handful of crispy potatoes on top.

Step 8

Finish with a sprinkle of grated Parmesan cheese, if using, and serve immediately.
