Ingredients

  • 1 pound Rigatoni pasta
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 24 ounces Marinara sauce
  • 1 cup Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 3 cloves Garlic cloves, minced
  • 1 medium Yellow onion, diced
  • 2 tablespoons Olive oil
  • 0.25 cup Fresh basil leaves, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook until al dente, according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for another 1 minute until fragrant.

Add the Italian sausage to the skillet. Break it into small pieces with a spoon or spatula and cook until browned and fully cooked, about 6–7 minutes. Drain any excess fat if necessary.

Stir in the marinara sauce, dried oregano, salt, and black pepper. Simmer the sauce for 5–7 minutes to allow the flavors to meld. Remove from heat.

In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, and chopped basil. Stir until well mixed.
