Ingredients

  • 1.5 pounds Ground chicken
  • 0.75 cups Breadcrumbs
  • 0.25 cups Milk
  • 1 large Egg
  • 0.5 cups Grated Parmesan cheese
  • 1 cups Shredded mozzarella cheese (divided)
  • 0.5 cups Finely chopped onion
  • 2 cloves Minced garlic
  • 2 tablespoons Chopped fresh parsley
  • 1 teaspoons Dried Italian seasoning
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 cups Marinara sauce (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a loaf pan with non-stick cooking spray or line it with parchment paper for easy removal.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let this mixture sit for 5 minutes to absorb the liquid.

Step 3

In a large mixing bowl, combine the ground chicken, soaked breadcrumbs, egg, Parmesan cheese, 3/4 cup of mozzarella cheese, onion, garlic, parsley, Italian seasoning, salt, and black pepper.

Step 4

Gently mix all the ingredients until well-combined, but do not overmix as this can make the meatloaf dense.

Step 5

Transfer the mixture to the prepared loaf pan and shape it into an even loaf.

Step 6

Spread the marinara sauce evenly over the top of the meatloaf.

Step 7

Bake in the preheated oven for 40 minutes. Remove from the oven, sprinkle the remaining 1/4 cup of mozzarella cheese over the top, and return to the oven for an additional 10 minutes, or until the internal temperature reaches 165°F (74°C).

Step 8

Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This helps it firm up and makes slicing easier.

Step 9

Serve warm with a side of your favorite vegetables, pasta, or a fresh salad.
