Ingredients

  • 4 pieces Chicken breasts
  • 200 grams Italian sausage (mild or spicy, casings removed)
  • 120 grams Mozzarella cheese, shredded
  • 60 grams Baby spinach
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh basil, chopped
  • 60 grams Breadcrumbs
  • 30 grams Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 piece Egg, beaten
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a baking dish with a little olive oil.

Step 2

Place the chicken breasts on a cutting board and use a sharp knife to butterfly each breast. Carefully cut horizontally through the thickest part, stopping short of the edge, and open the chicken like a book.

Step 3

Place each butterflied chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently flatten them to an even thickness of about 1/4 inch.
