Ingredients

  • 600 grams Carrots
  • 2 tablespoons Extra virgin olive oil
  • 2 pieces Garlic cloves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Grated Parmesan cheese (optional)
  • 1 tablespoon Fresh parsley (chopped)

Directions

Step 1

Peel the carrots and slice them into evenly sized sticks or rounds, about 1/4 inch thick.

Bring a large pot of water to a boil and cook the carrot slices for 5-7 minutes until they are slightly tender but not mushy. Drain and set aside.

In a large skillet, heat the olive oil over medium heat.
