  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 packet dry Italian seasoning mix
  • 4 cloves garlic cloves, minced
  • 1 medium onion, sliced
  • 1 cup pepperoncini peppers, with juice
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons crushed red pepper flakes
  • 6 pieces sandwich rolls
  • 6 slices provolone cheese (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Season the beef chuck roast with salt and black pepper on all sides.

Sear the roast in the hot oil for 2-3 minutes per side until browned. Remove from heat and set aside.

Place the sliced onions at the bottom of a slow cooker.
